Mississippi Mud Pie






MISSISSPPI MUD PIE from everyday chocolate recipe book




Ingredients - serves (8)




PASTRY



225gm flour, plus extra for dusting

2 tbsp cocoa powder

150gm butter

2 tbsp caster sugar

1-2 tbsp cold water






FILLING


175g butter

350gm brown sugar

4 eggs lightly beaten

4 tbsp cocoa powder, sifted

15ogm plain chocolate

300ml single cream

1 tsp chocolate extract






TO DECORATE


425gm double cream, whipped

chocolate flakes and curls

[i add extra fresh fruits]






METHOD


1. To make the pastry, sift the flour and cocoa into mixing bowl. Rub in the butter with theh fingertips until the mixture resembles fine breadcrumbs. Stir inthe sugar and enough cold water to mix to a soft dough. Wrap the dough and chill in the refrigerator for 15 minutes




2. Roll out the pastry on alightly floured work surface and use to line a 23cm/9 inchi loose based tart in or ceramic pie dish. Line with baking parchment and fill with baking beans. Bake in preheated oven 190 degree celcius for 15 minutes. Remove from the oven and take out the beans and parchement. Bake the pastry case for further 10 minutes.




3. To make the filling, beat the butter and sugar together in a bowl and gradually beat in the eggs with cocoa. Melt the chocolate and beat it into the mixture with the single cream and the chocolate extract.




4. Reduce the oven temperature to 160 degree celcius. Pour the mixture into the pasty case and bake for 45 minutes, or until the filling has set gently.




5. Allow the mud pie to cool completely, then transfer it to a serving plate, if you like. Cover with the wipped cream. Decorate the pie with chocolate flakes and curls and the chill until ready to serve
